Suzanne St. John’s Favorite Shrewsbury Biscuits

4 ounces butter
4 ounces sugar
1 egg
1 tablespoon grated fresh lemon rind
8 ounces flour
1 teaspoon baking powder

  1. Cream the butter and sugar, add the egg and rind and then beat well.
  2. Add the sifted flour and baking powder.
  3. Knead, roll out and cut into rounds.
  4. Bake 15-20 minutes at 350.
